1lb Flour
4oz Lard
4oz Butter
2 teaspoons baking powder
7oz Sugar
8oz Currants
3 Eggs
Pinch of Nutmeg
Milk to mix

Pre-heat oven to 350F(or gas mark 5)

Grease and flour a shallow tin.


Cut lard and butter into small pieces and rub into flour, then mix in the rest of the dry ingredients.
Beat the eggs well and stir into the dry ingredients, adding just enough milk to keep the mixture soft.
Turn mixture into tin and bake for 20 minutes. Reduce heat to 275F (Gas mark 3) and bake for a further 40 minutes.

Hi Clueless,
This recipe brings back memoies for me. Like you, my grandmother and my mother both made this on a regular basis.
I will have to switch off the computer and drag BG into the kitchen to make some.
