Ingredients
8ozs flour 2 eggs Pinch of salt Butter Cooking fat Caster sugar 6 pints of beer
Sift flour and salt into a large mixing bowl. Gradually beat in the eggs and 1 pint of beer. Continue beating until mixture is smooth. Cover bowl with a cloth and allow mixture to stand for at least an hour.
In a frying pan melt together a small knob of butter with a small knob of cooking fat or lard, then cook pancakes until a light golden brown. Spread each pancakes with butter while they are still hot and dredge with caster sugar.
Drink the other 5 pints of beer to keep yourself cool while standing in front of a hot stove.
