Beef and Guinness Stew.(Serves 6)

Ingredients

2lbs shin of beef
2 onions, roughly chopped
4oz button mushrooms
8oz shiitake mushrooms, thickly sliced
1 and 1/4 pints Guinness, or other stout
2 tablespoons tomato puree
1/4 tablespoon of sugar
1 bay leaf
2 sprigs of thyme
2 sprigs of parsley
1 sprig of rosemary
Salt and pepper to taste

Directions

Preheat the oven to 170C/325F/Gas mark 3

Cut the beef into 1 and a half inch cubes and toss in seasoned flour.

Heat a third of the butter and half the oil in a frying pan and brown the meat quickly in batches, adding more oil if needed, then transfer to a casserole dish.

Add a little more butter and oil to the pan and fry the onions until lightly browned, then fry button mushrooms and place in casserole dish with the beef.

Pour the Guinness into the pan and bring to the boil, scraping in the brown residues from frying, then stir in the tomato paste and sugar and pour into the casserole.

Tie the herbs with string to make a bouqet garni and add to the casserole, along with the salt and pepper.

Cover and cook for 2-and-half to 3 hours until the meat is tender. Check occasionally, and if it appears to be drying out, add a little hot water.

Saute the shiitake mushrooms in the remaining butter. Stir into the casserole and return to the oven for 5 minutes.

Discard the bouquet garnis, adjust the seasoning and serve.

Clueless that sounds really scrummy just what we need in this weather ,think I'd make a few dumpling to go with that .OH I am starving now after reading that.
BTW I have never heard of shiitake mushrooms .

Thanks for putting up those sites about shiitake mushrooms ,very interesting .It is surprising the medicinal uses they have isn't it .
