 Cranberry & Parmesan Muffins.....Finally!!!

Makes 18
Ingredients:
• 8oz (225g) Plain Flour
• 2 tsp Baking Powder
• 0.5 tsp Salt
• 1.75 oz (50g) Caster Sugar
• 1.75 oz (50g) Melted Butter
• 2 Beaten Eggs
• 7 fl oz (200ml) Milk
• 3.5 oz (100g) Cranberries (fresh or dried)
• 2 Tbsp Freshly Grated Parmesan

Method:
• Preheat Oven to 200
• Lightly grease 2 bun tins
• Sieve flour, baking powder & salt into a large bowl, stir in the sugar
• In a separate bowl mix butter eggs & milk
• Pour wet ingredients into dry and mix gently until combined
• Add cranberries & mix in
• Divide the mixture between the tins
• Sprinkle the grated parmesan over the top of each unbaked muffin
• Bake for about 20 mins (or until well risen & golden)
• Leave to cool in the tins, then transfer to a wire rack & cool totally before serving



BG, if you want a sweeter version - leave the parmesan off one tin of the muffins & sprinkle them with demerara sugar instead, that way you & MR are both happy!!

thats ok, let me know hw they turn out- the secret is not to overmix them cos then they lose some of the air in them that makes them rise nicely! Dont worry if the mix looks lumpy!!

Hurrah !! At last I got the cranberries today while out on my shopping expedition , so it will be Cranberry and Parmezan muffins tomorrow.

Huuumm !!!! Well I made the Muffins but I put paper cases in the bun tins thought they would come out better and not stick to the tins .Well they stuck solid to the papers instead .
We tasted a few and thought they were quite dry.I said to MR Strange there was no butter in the recipe maybe that is why they stuck .
I had not read the method of mixing them together as I basically knew how to mix ingredients together ,wish I had read it as I have just had another look and it does mention butter there.
BUT OH DEAR !!!! There was no butter mentioned in the list of ingredients .FOFL
Still they are edible so will be ok with some custard to soften them up .LOL

So Gemini next time we meet you can bring me a tin full of muffins made the correct way please .LOL

I have a confession... I missed out the butter i didn't realise till you just said - I had checked it all as well!! oops -I'll update it & then you can give it another go eh?!! Oh & I will make some & bring them down at the Xmas one- Xmassy ones...mincemeat ones I think... or maybe marmalade & Xmas spice ones? sorry BG - you can tell MR it was all my fault & that you are a fab cook when given the proper recipe!!

I forgive you as I said they are edible so nothing lost .I should have read it properly as well .MR always says I can cook I just can't be bothered because I don't enjoy doing it .
Will give the muffins another go next week.
This week I got some Wimberries so it will be a tart next . I have cheated as I bought frozen pastry ,I am too heavy handed to make pastry .

BB is a sporty sort of guy, so, make him some Muffins without the butter. They will make a good substitute for Squash balls.
The flavour is good but the texture leaves a bit to be desired. They improve if you put them to marinade in custard then microwave them.
LOL.

Where did you get the wimberries from BG? BB is always on about them but I've never heard of them!!

Unfortunately they are not fresh wimberries Gemini,it is a jar I bought in Asda Walmart. They are actually called Bilberries on the jar that is what they call them in England .Unfortunately they do not taste quite the same as the fresh ones we use to pick on the mountain side in Rhigos they were delicious .I remember they use to turn our mouths and teeth purple .
